Chef Michael Paley will host the traveling culinary event, Outstanding in the Field
on October, 4th at Proof's own Woodland Farm in Goshen, KY. A restaurant without
walls, Outstanding in the Field seeks to re-connect diners to the land
and the origins of their food, and to honor the local farmers and food artisans
who cultivate it. They have traveled across North America since 1999 setting the
long table at farms or gardens, on mountain tops or in sea caves, on islands or
at ranches.
Woodland Farm is owned by 21c Museum Hotel founders Laura Lee Brown and Steve Wilson.
Brown and Wilson purchased the historic property in 1995 with the desire to help
preserve the farmland on which they both grew up. The 1,019 acre farm is home to
the bison of Kentucky Bison Company and the Proof on Main Garden. Woodland Farm
is the largest single Kentucky property on the National Register of Historic Places.

Celebrate National Bourbon Heritage Month at Proof
on Main

Raise a glass to our Bourbon heritage this September. All month long, a special bourbon cocktail list will be available at Proof.
We're also offering the chance to learn from the area's top bourbon connoisseurs
as we feature bourbons from across the Commonwealth. Guest distillers will be on
hand – from 5:30 to 7:30pm – to answer questions and guide you through the history
of their bourbons. Proof will offer special tasting flights and a signature cocktail.

Wellmann, voted Cincinnati’s Best Mixologist of 2010 by CityBeat magazine,
will be behind the bar mixing up her twist on classic cocktails starting at 5:00
pm.
Wellmann is a self taught mixologist that has worked for some of the best bars and
restaurants in Cincinnati. She has immersed herself in the knowledge of classic
cocktails and fine spirits; studying the history and proper preparation of classic
cocktails from books dating back to the 1700s. Using classic cocktails as a base
for creating new and innovative drinks, Wellman uses simple syrups, bitters, liquors
and fresh juices she makes herself. Wellman has been featured in Cincinnati Magazine,
Cincinnati Enquirer, Metro Mix, and Cincy Chic. She was
born and raised in Cincinnati. After 12 years in San Francisco, she returned to
her beloved hometown to be closer to her family.

Kentucky's favorite chefs will be working side by side with the James Beard Foundation
and celebrity chefs from around the United States during the Alltech FEI World Equestrian
Games, which will feature eight world championships in equestrian sport at Lexington's
Kentucky Horse Park from September 25 through October 10, 2010.
Cookin' in the Bluegrass: A Celebrity Chef Dinner Series, will be held at the Kentucky
Horse Park's Farmhouse restaurant during the 16 nights of the 2010 Games. Each night,
80 guests will enjoy dining experiences that replicate the sumptuous dinners held
at the prestigious James Beard House in New York City.
The dinner series stems from collaboration between the Alltech FEI World Equestrian
Games, the James Beard Foundation and Kentucky Horse Park Foundation, and is sponsored
by Kentucky Proud, a program of the Kentucky Department of Agriculture, funded by
the Kentucky Agricultural Development Fund.
The celebrity and Kentucky chefs will together prepare dishes reflecting their geographic
region or culinary specialties, and will have the opportunity to use Kentucky-grown
food products. Participation by Kentucky Proud, funded in part by the Kentucky Agricultural
Development Fund, will highlight the vitality of the farm to table movement and
give visiting chefs access to fresh, locally grown food products.
Proceeds from Cookin' in the Bluegrass will benefit the James Beard Foundation,
the Kentucky Horse Park Foundation, and the Alltech FEI World Equestrian Games.

About the James Beard Foundation
Founded in 1986, the James Beard Foundation is dedicated to celebrating, preserving,

About the Alltech FEI World Equestrian Games
The Alltech FEI World Equestrian Games are the world championships of eight equestrian
disciplines recognized by the Fédération Equestre Internationale (FEI).

Farm and hear from the local farmers and artisan producers highlighted on the menu

benefit Slow Food Bluegrass.

Goldstein, a renowned chef, educator and writer, will be celebrating the release
of his latest book, Daring Pairings. The book explores the flavors and
pairing potential of thirty-six distinctive grapes from around the world. Goldstein
matches each grape to the recipe of a star chef, including Hubert Keller of Fleur
de Lys in San Francisco and Michelle Bernstein of Michy’s in Miami. The book demonstrates
how anyone can bring emerging wine varieties such as Grenache, Malbec and Grüner
Veltliner to the home table, and offers advice on crafting unforgettable wine and
food pairings.
The five course menu will be a collaboration between chefs Paley, Craft and Nashan.
Each course will engage one of the basic tastes – tart, bitter, sweet, and salty
– and will incorporate Proof’s flavor-focused cooking, inspired by the culinary

Today, one in four children is overweight or obese, and one in three will develop
diabetes in his or her lifetime. In the face of this crisis, our schools are financially
struggling to feed children anything but overly processed fast food that endangers
their health. For many children, school lunch is their only guaranteed meal of the
day. Right now, those children are forced to choose between going hungry and being
unhealthy. We can do better!
The need for real food in school has never been greater and Proof on Main is partnering
with Slow Foods USA's Time for Lunch campaign to help raise awareness to this crisis.

but be warned. They’ll offer this tip and then immediately go put their money on
the bay. (A grey horse has been crowned winner of the Derby just twice; a bay has
won 47 times.) This year the smart bet for Derby dining is the Red Penguin.
Proof is looking forward to playing host during this exciting weekend in Louisville.
Executive Chef Michael Paley has crafted a wonderful four-course dinner menu that
will be offered Thursday through Saturday. Keep in mind that Chef Paley only uses
the freshest ingredients, so menu items are subject to change. Reservations are
strongly recommended.
Please be advised that Derby week parking can be a bit hectic. Our valet service
is available for your convenience. Located directly in front of the restaurant,
the charge is just $4 per vehicle and is to be paid directly to the valet. Other
parking options include:
- Limited metered spaces are available along Main Street. These metered spots are
free after 6pm and on weekends.
- A parking garage on Seventh Street next to the 21c Museum Hotel. Please keep in
mind that Seventh Street is a one-way street and cannot be accessed directly from
Main. You can use Jefferson or Market St to access 7th Street and the garage.
- An open-air lot located of Eighth Street between Main and Market.
After 134 years, Louisville is pretty accustomed to dealing with the traffic influx.

Milliner Paris Kyne will be at 21c for a workshop the week prior to the Kentucky
Derby. The exhibition features work that was inspired by the sea of color and dynamic
movement the designer saw at the 2007 Derby. In addition to the exhibition, a selection
of similar hats will be available for purchase through the 21c Museum Shop. Those
who purchase these one-of-a-kind pieces can be custom fitted and have alterations
made during the daily workshop the week prior to Derby.

folks at Proof on Main are at it again—opening their tip jars to help a good
cause. This time around Maker's Mark President Bill Samuels and FOX 41 television
personality Keith Kaiser will be joining the ranks of Proof's barkeeps, with their
hard-earned tips going to benefit the children at Louisville's Visually Impaired
Preschool.
On Sunday, February 22nd at 5:30pm Samuels and Kaiser will be put to work. Head
down to Proof, enjoy a cocktail, and watch to see if Samuels' bourbon expertise
will serve him well behind the bar, with Bernson on hand to give the play-by-play
of the night's inevitable spills and laughs. All their tips and a portion of the

Visually Impaired Preschool Services (VIPS) is a Kentucky agency that works to help
blind or visually impaired infants, toddlers, and preschoolers and their families
through the very important early years of life when children are so ripe for learning.
VIPS works to show children how to use their remaining vision and other senses to
learn about the world and to build the self-esteem that will be so necessary for
the progress throughout life.

Proof on Main's Ice Cream Gives Relief from Summer Heat While
Benefiting Local Kids' Charities
July 2008
This July come to Proof on Main to stay cool and satisfy that sweet tooth – all
the while helping to benefit some local kids in need. During National Ice Cream
month, all proceeds from the restaurant's sales of ice cream and sorbet will go
to the Louisville Deaf Oral School and the Kosair Children's Hospital through the
Children's Hospital Foundation. Proof staffers have also volunteered to help host
ice cream parties for the kiddos.
"This is an exciting event for us, and one of the many ways our team is able
to say thank you to the city for embracing what we've been doing and supporting
our endeavors," said general manager Brooks Reitz. "It's great to give
back, in whatever capacity is possible."
Last year, standout flavors like caramelized pineapple and sea salt caramel tempted
and the classics, like chocolate hazelnut and vanilla malt, were a delight. Proof
was able to raise $4,528 for the children's charities. This year Chef Michael Paley
is hard at work crafting new flavors, featuring local ingredients including fresh
berries and melons from the Ohio River Valley, that are sure to please. So visit
Proof to help local children—and be sure to save room for dessert.
Kosair Children's Hospital, Kentucky's only full-service, free-standing pediatric
hospital, serves more than 100,000 children annually. As a regional facility that
treats all children regardless of the family's ability to pay, the hospital relies
on support from the community.
The Louisville Deaf Oral School is a regional not-for-profit educational center
for deaf and hard-of-hearing children, ages birth to seven years of age. The school
serves more than 150 children annually from 18 Kentucky and seven Indiana counties
and relies on support from the community. No deaf or hard of hearing child has ever
been denied services due to the family's ability to pay.

Derby Weekend Dining at Proof on Main
Thursday, May 1st - Saturday, May 3rd
During your visit to Louisville and
Churchill Downs, locals will often advise you to wager on the grey pony,
but be warned. They'll offer this tip and then immediately go put their money on
the bay. (A grey horse has been crowned winner of the Derby just twice; a bay has
won 47 times.) This year the smart bet for Derby dining is the Red Penguin.
Proof is looking forward to playing host during this exciting weekend in Louisville.
Executive Chef Michael Paley has crafted a wonderful four-course dinner menu that
will be offered Thursday through Saturday. Keep in mind that Chef Paley only uses
the freshest ingredients, so menu items are subject to change. Reservations are
strongly recommended.
Please be advised that Derby week parking can be a bit hectic. Our valet service
is available for your convenience. Located directly in front of the restaurant,
the charge is just $4 per vehicle and is to be paid directly to the valet. Other
parking options include:
- Limited metered spaces are available along Main Street. These metered spots are
free after 6pm and on weekends.
- A parking garage on Seventh Street next to the 21c Museum Hotel. Please keep in
mind that Seventh Street is a one-way street and cannot be accessed directly from
Main. You can use Jefferson or Market St to access 7th Street and the garage.

The WHAS Crusade for Children, Inc. established in 1954 by WHAS-TV, raises money
for schools, agencies and hospitals to better the lives of special needs children.
In its first 53 years, the Crusade has raised more than $118 million. Thanks to

of all donations to organizations that serve special needs children in all 120 Kentucky
counties and more than 50 southern Indiana counties. Fire departments raise more
than 50 percent of the money each year by staging road blocks and other events.

Lancaster Gordon will be the first to stir things up on Sunday, August 19 from 6:00pm
to 10:00pm Well known from his days in the NBA, he's now helping the community by
recruiting and coordinating volunteers for Court Appointed Special Advocates (CASA)
of Jefferson County. All of his tips and a portion of the bar proceeds will benefit
the non-profit organization.
“Lancaster is such an impressive man and seems to do everything well,”
said Proof on Main‘s general manager Jeremy Beck. “Beyond his amazing
basketball career, he has really committed himself to helping Louisville‘s
children throughout the years. We can‘t wait to see what he can do with a
martini.”
Gordon has been the coordinator of volunteer advocates at CASA for five years. He
is also responsible for recruiting new volunteers. For nearly 15 years, Gordon has
dedicated his life to helping children with organizations including CASA. Many fans
recognize him from his days on the court at the University of Louisville where he
studied psychology. In 1984, he was selected eighth by the Los Angeles Clippers
in the first round of the NBA draft. He enjoyed several years of success as a professional
basketball player before focusing his attention on helping needy children in Louisville.
“In Jefferson County, abuse and neglect of children rose 37 percent from 2005
to 2006,” said Gordon. “There is a real need for funds and volunteers.
That is why I feel it is so important to get the word out about CASA.”
CASA is a private, non-profit organization that trains and supports volunteer advocates
who are appointed by the Jefferson County Family Courts to work on behalf of abused
and neglected children. CASA volunteers are trained to keep these children from
getting “lost” in the system. The Jefferson County CASA Project, founded
in 1985, was the first one in Kentucky and is one of more than 900 CASA projects
in 50 states nationwide.

Proof on Main Pays Tribute to Kentuckiana Farmers with a "Grow for Good"
Dinner

Chef Michael Paley and the culinary staff at Proof on Main have become known for
their commitment to using fresh local products. Now, the popular restaurant is teaming
up with Food & Wine magazine's Grow for Good Campaign to host a multi-course
dinner using foods from some of Kentucky and Southern Indianas most popular producers
on Wednesday, August 15 at 7:00pm
"We believe in this program and we are looking forward to making this a real
local meal," said Paley. "We are working with great people like Susie
Quick at Honest Farms and Steve Wilson at the Kentucky Bison Company. These people
know all about the flavors that come from our own backyard."
Farm to Table is a national initiative of Earth Pledge, a New York-based nonprofit
organization dedicated to finding sustainable solutions to environmental challenges.
Food & Wine's Grow for Good campaign's purpose is to raise $1 million for Farm
to Table. The money will be used for program expansion, education and national networking
for accessing locally-grown foods.
"We have always been strong advocates of preservation like the work we have
done with our bison at Woodland Farm," said Steve Wilson, co-owner of Kentucky
Bison Company and Proof on Main. "This cause is really something we believe
in, and are so proud to be a part of helping save farms across the country."
In partnership with 21c Hotel and Kentucky Bison Company, Proof on Main also donated
a package for Food & Wine's Grow for Good online auction which was promoted
at the Food & Wine Aspen Classic in June. The auction closed on Friday, June
29 and the winning bidder received the package named "Southern Hospitality"
for $435. The package includes a two-night stay at the 21c Hotel and a guided tour
of the museum, dinner for two at Proof on Main and a visit to Woodland Farm.

Proof on Main's Ice Cream Gives Relief from Summer Heat While Benefiting Local Kids'
Charities

Ice cream is a natural choice for a tasty summer treat and cooling off at Proof
on Main in July will help benefit some local kids in need. During National Ice Cream
month, all proceeds from the restaurant's sales of ice cream and sorbet will go
to the Louisville Deaf Oral School and the Kosair Children's Hospital through the
Children's Hospital Foundation. Proof will also host ice cream parties for both
institutions.
"With the help of the community, last July we raised $5,248 for children's
charities," said general manager Jeremy Beck. "We are really proud of
that and hope this year's event will be even better."
Chef Michael Paley has created a variety of creamy delights to suit every taste

Kosair Children's Hospital, Kentucky's only full-service, free-standing pediatric
hospital, serves more than 100,000 children annually. As a regional facility that
treats all children regardless of the family's ability to pay, the hospital relies
on support from the community.
The Louisville Deaf Oral School is a regional not-for-profit educational center
for deaf and hard-of-hearing children, ages birth to seven years of age. The school
serves more than 150 children annually from 18 Kentucky and seven Indiana counties
and relies on support from the community. No deaf or hard of hearing child has ever
been denied services due to the family's ability to pay.

Empujón's New Works Performance

Louisville's foremost contemporary dance project, Empujón, will be returning to
21c Museum Hotel following their standing room only performance in 2006 to bring
an evening of original premiers Thursday May 24th and Friday May 25th 2007. The
evening will consist of new works by choreographer and Empujón Creative Director
David Ingram as well as new works by Philadelphia's Ashley Suttlar and Louisville's
Mikelle Bruzina, Delilah Smyth, Theresa Bautista and new Louisville resident Pete
Lay. Also new this year to Empujon is video art design by Louisville based artist
Valerie Sullivan Fuchs.
Empujón is the vehicle of choreographer / dancer David Ingram. Upon graduating from
Butler University with a B.F.A. in dance performance, David went on to study dance
and choreography with numerous schools, companies and summer programs across the
U.S. David currently dances with North Carolina Dance Theatre, but Louisville audiences
will recognize David as a former member of the Louisville Ballet.
It is most important that you see that all movement is beautiful, and that all movement
is art. If, after having watched Empujón, you look at yourself and see how beautiful
you are when you move then we as Empujón have accomplished something wonderful.
