Catfish Rillet

Ingredients

  • 2lb catfish fillet, boneless
  • 1t Dijon Mustard
  • 8oz crème fraîche
  • 1 jalapeño
  • 1 shallot
  • 2 cloves of garlic
  • 1 large idaho potato
  • 2 stalks parsley, chopped
  • 2 stalks tarragon, chopped
  • 10 chives, Chopped
  • 2T lemon juice

Preparation

  1. Lightly salt catfish and smoke until fully cooked. Let cool and flake.
  2. Combine all of the ingredients in mixer. Check seasoning and adjust accordingly.
  3. Spoon into mason jars or quenelle with 2 spoons onto a plate.
