Heirloom Tomato Salad

Serves 2


3 heirloom tomatoes, washed
ΒΌ of a red onion finely julienned
1 stalk of celery finely sliced
1 ball of ovaline sized fresh mozzarella cut into six wedges
1 bunch of picked green basil
2 teaspoons fleur de sel Fresh cracked black pepper
3 teaspoons estate bottled red wine vinegar
3 tablespoons estate bottled extra virgin olive oil
1 tablespoon good quality aged balsamic vinegar


Cut tomatoes into wedges of varying sizes and divide evenly among the salad plates

Put three wedges of mozzarella on each

Sprinkle with sea salt and cracked black pepper

Garnish each with celery, onion and basil

Drizzle with red wine vinegar, olive oil and balsamic vinegar

Serve immediately
