Minted Pea Puree

Serves 48 hor d'oeuvre size portions


2 cups frozen green peas, thawed
¼ cup packed mint leaves
¼ cup packed flat leaf parsley leaves
½ cup extra virgin olive oil
2 tablespoons lemon juice
Salt and freshly ground pepper to taste


Put half of the peas into a food processor with the remaining ingredients.

Puree to a smooth paste

Turn out into a bowl and combine with whole peas, season as needed.

Would be great garnished with crisp bacon or pancetta, parmigiano, and a drizzle of a good quality balsamic vinegar.

Serve immediately with grilled bread.
