Jonathan Searle returns to Louisville to Serve as Executive Chef of Proof on Main

Louisville, KY (March 27, 2019) – 21c Museum Hotels, the award-winning Louisville-based boutique hotel, contemporary art museum and restaurant group, announced today the appointment of Jonathan Searle as executive chef of its Louisville restaurant, Proof on Main, located in 21c Museum Hotel Louisville (702 W Main Street, Louisville, KY). Searle comes to Proof on Main from another 21c Museum Hotels restaurant, Lockbox, in Lexington, KY, where he served as executive chef.

Searle began his culinary career in 2008 at Lexington staples Dudley’s on Short, Bourbon n’ Toulouse, and Bellini’s. In 2011, Searle joined the team at Proof on Main, the acclaimed restaurant at 21c Museum Hotel Louisville, and quickly rose through the ranks to become executive sous chef. Searle helped the restaurant earn numerous accolades including a place on Bon Appétit magazine’s list of “10 Best Hotels for Food Lovers.” With a successful tenure at Proof on Main, Searle returned to Lexington to open Lockbox restaurant at 21c Museum Hotel Lexington. As the executive chef of Lockbox, his menus were a heartfelt and eclectic expression of the Kentucky Bluegrass region’s freshest seasonal offerings from a strong network of the region’s craft purveyors.
