Born in Lexington, Kentucky, Dailey began his culinary career in 2005 at Sullivan University, where he obtained a degree in Culinary Arts, Baking & Pastry Arts and Hospitality Management. After graduating Sullivan, Jeff worked at numerous fine dining restaurants in Louisville before finding a home at Corbett’s Restaurant in 2007. In 2017 he made the transition to Harvest Restaurant as Executive Chef and then in 2020 he opened Matt Winn Steakhouse at Churchill Downs.
Jeff joins the team at Proof on Main as Executive Chef, bringing regional Appalachian ingredients, locally influenced with Louisville soul to Proof’s kitchen and your table.
